INTRODUCTION TO COCOA IN GUADELOUPE

Cultivated by the Aztecs and Mayans in Central America, cocoa was introduced to Guadeloupe during the colonial era in the 17th century by European settlers looking for lucrative crops to introduce to their colonies. The climatic conditions of the Guadeloupe Islands made it an ideal place to grow cocoa.

The introduction of cocoa to Guadeloupe had a significant impact on the island's history. Cocoa cultivation contributed to the colony's plantation economy and played a role in the daily lives of its inhabitants. Cocoa beans were exported to Europe to be processed into chocolate and chocolate products.

Over time, with political and economic changes, the economic importance of cocoa in Guadeloupe has fluctuated. However, the tradition of cocoa cultivation has survived, and today the Guadeloupe Islands continue to grow cocoa and produce high-quality chocolates.

THE CHOCOLATE-MAKING PROCESS

This enchanting journey begins in the fertile plantations, bathed in tropical light. Cocoa trees, silent witnesses of time, patiently welcome the sun. The cocoa beans, guardians of the secrets of Guadeloupe's soil, ripen at their own pace, capturing every breath of the island.

A careful dance then begins, orchestrated by expert hands. Fermentation, like a subtle alchemist, awakens a symphony of complex aromas. The beans, imbued with mystery, are then dried under the benevolent gaze of the sun.

Then, the metamorphosis accelerates. Roasting awakens the senses, transforming the beans into glistening brown jewels. Their essence is released, revealing a unique richness of flavor. The beans, stripped of their shells, become "nibs", raw treasures of flavor.

The nibs metamorphose into a liquid cocoa paste, a bewitching symphony of textures and nuances. The ballet continues with refining and conching, sublime dances that reveal unexpected sweetness and subtle aromas. Like magic, the art of chocolate-making adapts the process to a creative vision..

This liquid chocolate, the very essence of Guadeloupe, becomes a canvas for chocolate artists. From bold tablets to sensual pralines, each creation is a story in itself. The artisans infuse their passion, skilfully blending vanilla, coconut and exotic fruits, to offer a symphony of Caribbean flavours.
